Heat oil in a large pot. Add sliced sausage and cook until browned, about 3-4 minutes. Remove and set aside.
Add onion, celery, and red bell pepper. Cook 5-8 minutes until soft. Add garlic and cook 1 minute.
Stir in Cajun seasoning, salt, pepper, paprika, and cayenne. Let spices bloom.
Add broth and cubed potatoes. Simmer 20-25 minutes until fork-tender.
Return sausage, stir in cream and cheese. Simmer 5 more minutes.
Garnish with parsley and serve hot.
