21 Day Fix Broccoli Cheese Soup {instant Pot | Stove Top}
  1. Turn on the saute function, melt the butter in your pot and cook the onions and carrots in the butter until they start to soften.

  2. Add the roughly chopped broccoli, the cauliflower, ½ teaspoon salt and the broth. Place a steamer basket on top and put the small-chopped broccoli into the steamer.

  3. Put the lid on and set on manual for 2 minutes, quick release when it's finished.

  4. Remove the steamer basket with the broccoli and set aside. Blend the mixture in the pot using an immersion blender or in batches in a regular blender.

  5. Add in the finely chopped broccoli and stir in the cheese until melted, add pepper to taste and serve.

  6. For stove top directions, melt the butter over medium heat, add the onions and carrots, and cook until they start to soften.

  7. Add the roughly chopped broccoli, cauliflower, salt, and broth. Cover and simmer until veggies are very soft.

  8. Cook the small chopped broccoli in the microwave until very soft.

  9. Puree the mixture in the blender in batches until all of the contents are pureed. Return to pot.

  10. Heat pot on low heat, stir in the shredded cheddar cheese and the cooked finely chopped broccoli until all of the cheese is melted. Add pepper to taste and serve.
