In a pot of boiling water, cook gnocchi according to package instructions or until they float to the surface.
Meanwhile In a medium sauce pan, melt the vegan butter with cinnamon and brown sugar until simmering. Add cooked and drained gnocchi to pan and let simmer for 5-8 minutes or until fully coated or browned and slightly crispy.
Add gnocchi to a serving bowl and top with granulated sugar and vanilla ice cream.
