Heat olive oil, garlic cloves, and herbs over low heat until garlic is slowly simmering
Simmer oil for 30 minutes, or until garlic is golden brown
Remove from heat and smash the garlic ; let the olive oil cool with the garlic and herbs for 30 minutes
Strain the oil with a sieve or coffee filter; discard garlic and herbs
Mix oil with remaining marinade ingredients
Place pork chops in a large zip lock bag or shallow pan and add the marinade, coating the meat well
Seal the bag/pan and refrigerate overnight.
Remove meat from the refrigerator and place it on the counter as you prepare sides
When ready to cook pork chops, remove chops from marinade and pat dry
Cook 2-3 minutes per side on medium heat (4 to 5)
Let chops rest for at least 5 minutes before serving
