MAKE THE GARLIC BUTTER: To a small bowl, add the melted butter, parsley, garlic, parmesan, salt, black pepper, and oregano. Mix together and set aside.
MAKE THE CHIPOTLE SAUCE: To make the chipotle sauce, mix together mayonnaise, sour cream, lime juice, honey, black pepper, chili powder, and adobo chipotle paste in a small bowl. Once smooth, set it aside.
MAKE THE SLIDERS: Preheat the oven to 375°F. To a pan over medium heat, add butter or oil. Crack the eggs in and allow it to cook low and slow. Break apart the yolks and slowly move the eggs around to make them scrambled and super fluffy. Optional, I love adding a bit of cheddar cheese to melt into the scrambled eggs! Add salt and black pepper to taste and once the eggs are fully cooked to the way you like them, take off the pan.
Now it's time to cook the bacon. Add bacon to a hot pan over medium heat. Allow it to fry on one side until golden and crispy, then flip it over. Add a sprinkle of brown sugar if you'd like at this step and continue to cook. Once crispy and fully cooked, take off the pan.
Slice the rolls open in half and lay on a baking sheet lined with parchment paper. Brush both sides with the garlic butter and bake in the oven for 10 minutes just until toasted and a bit crispy.
Take out of the oven and assemble. To the bottom bun, add chipotle sauce, avocado, eggs, and the bacon. Add the top buns on top. Slice into individual sliders and enjoy!
