Thaw puff pastry overnight in the fridge or a few hours on the counter
Mix all cheese filling ingredients (cottage cheese, sour cream, feta, shredded cheese, torn cheese slices, and eggs) in a bowl
Place one sheet of puff pastry on a parchment-lined baking sheet
Spread the cheese filling all the way to the edges
Top with the second pastry sheet without crimping
Use a sharp knife to cut diagonal lines in one direction, then the other to create diamond slices
Brush with beaten egg and sprinkle toppings of your choice
Bake at 375°F (190°C) for approximately 45 minutes until golden and crisp
Let rest for 5-10 minutes, then re-cut if needed
Serve with matboucha, hard-boiled eggs, olives, cucumbers, and labne with za'atar
