combine chicken, eggs, onion, parsley, mozzarella, and half of the ranch seasoning in a large bowl
Directions:
Preheat oven to 200° and place a rack inside the sheet pan to keep the patties warm
Add oil to pan over medium heat. Working in batches spoon about a quarter of a cup of the chicken mixture into the skillet for each patty.
Cook undisturbed into a golden brown boat for minutes. Flip and cook into golden brown and cook through on the other side. Approximately four minutes. Internal temperature should be 165°.
Place cooked patties in oven to stay warm and repeat process
Sauce:
Combine remaining mayonnaise and remaining ranch seasoning in a bowl. Add lemon juice and cayenne and stir to combine. Serve chicken patties with ranch sauce.
