Lemon Dijon Instant Pot Shredded Chicken
  1. Season the chicken with salt and pepper and add to an instant pot.

  2. Cover with Italian seasoning and coat in dijon mustard.

  3. Stir in the lemon juice and chicken stock. Season slightly more with a small amount of salt and pepper.

  4. Add the lid and cook on high pressure for 30 minutes. Let the steam naturally release and then remove and enjoy the chicken!
