Preheat the oven to 400°F.
Line a baking sheet with parchment paper.
Slice the onions into rings using a mandoline if you have one, or a knife is fine too.
Add a layer of cheese to the prepared baking sheet, then add the onion slices.
Place each onion "ring" side-by-side basically kissing, but not overlapping.
In a small bowl, add your olive oil and spices and mix well to combine.
Brush, using a silicone brush the onions to completely cover them in the oil mixture.
Bake for 15-20 minutes or until golden brown.
Let them cool for 10 minutes and then enjoy with some more marinara or with nothing at all!
