Fill a shallow bowl with warm water. Dip one rice paper sheet in for 5-10 seconds until just softened - it should feel slightly firm when you lift it out as it will continue to soften as you work.
Lay it flat onto your chopping board and add some crispy tofu, a mix of cucumber, carrot, pepper, a small bundle of rice noodles and some fresh herbs.
Fold the bottom of the rice paper up over the filling, tuck in the sides, then roll away from you to tightly seal - make sure it’s tight and compact, otherwise it will fall apart!
Repeat until you’ve made 4-5 rolls.
To stop them sticking together, place each roll on a strip of baking paper as you go.
Take around ⅓ of your peanut dressing (from meal prep) and loosen it with a splash of warm water until it becomes smooth, glossy and dip-able.
