Pat the chicken dry
Flatten it evenly
Coat both sides with (A)
Stretch the skin tight
Place skin-side down in a cold pan (no oil)
Add a weight on top
Cook on medium-low heat for about 10 min until crispy
Flip and cook for about 2 min
Cover with foil and let it rest
Add (B) to a pan and simmer until slightly thickened
Turn off the heat and melt the butter
Serve with the sauce
