Preheat your oven to 325F.
In a pot over medium/low heat, melt the coconut oil, maple syrup, salt and brown sugar together. Remove from heat once the sugar is dissolved and everything is well combined. Add in the vanilla extract and stir together.
In a large bowl, combine the oats, shredded coconuts, pecans, and almonds.
Pour the maple syrup mixture into the bowl with the oat mixture and stir well until fully coated.
Dump the granola onto a parchment lined baking sheet and bake for 20 minutes. Turn the sheet around and bake an additional 5 minutes. Let cool completely.
Break off clusters as large as your heart desires and sprinkle the Craisins all over.
