Peanut Butter Miso Noodles
  1. In a bowl, whisk together the miso, peanut butter, chili oil/sriracha, rice vinegar, minced garlic, soy sauce, and maple syrup. Stir until incorporated.

  2. Cook your noodles and reserve ¼ of noodle water.

  3. In a bowl, add the noodles, peanut butter-miso sauce, and noodle water. Mix until all the noodles are coated and the sauce begins to cling to each noodle.

  4. Top with favorite toppings such as steamed bok choy, sauteed mushrooms, sesame seeds, scallions, and chili oil.
