Preheat Oven to 425’
Unwrap & place Boursin Cheese in the center of an 8x12” or 9x13” ovenproof baking dish
Surround cheese with tomatoes, shallots, garlic & rosemary. Drizzle with olive oil and season with salt & pepper
Roast until garlic is very soft and tomatoes have broken down, 20-25 minutes
Remove from oven, remove rosemary stems and transfer to food processor or blender
Add basil, sundried tomatoes & balsamic vinegar, blend until smooth
Serve in bowls with toasted crostini. Enjoy!
