Coat chunks of chicken in egg, then cornflour.
Air fry the chicken on 180 with a spray of oil until golden, flipping halfway (about 15 mins).
Add chopped peppers and onions near the end so they soften and char slightly.
In a pan, mix 3 tbsp ketchup, 2 tbsp light brown sugar, 1½ tbsp soy sauce, 2 tbsp rice vinegar, 1 tsp cornflour (mixed with a splash of water and the juice of a small tin of pineapple chunks (save pineapples to add at end!).
Stir and simmer the sauce until thick & sticky.
Air fry steak-cut chips until nearly done, toss in more onions and pepper and salt & pepper seasoning (i mixed a tbsp of sugar, with a good pinch of each salt, pepper, Chinese five spice and some chilli flakes and crisp them up.
Layer it up: chips first, sweet-and-sour chicken on top, and curry sauce if you're feeling it!
