Flour-free Flax Bread With Olives And Sun-dried Tomatoes
  1. Preheat the oven to 200°C/180°C fan and line a 12x6x23cm loaf tin with baking parchment

  2. In a large bowl, mix together the dry ingredients (flaxseed, sunflower seeds, chia seeds, psyllium husk flakes, and sea salt)

  3. Add the olive oil and water to the dry ingredients and stir to combine until a sticky dough forms

  4. Scrape the dough into the prepared loaf tin, pressing it into the edges, and smooth the surface with the back of a water-dipped spoon

  5. Bake for 60 minutes until golden and firm to the touch

  6. Remove the loaf from the tin and return to the oven for another 15 minutes

  7. Place on a wire rack to cool completely before slicing and freezing

  8. Toast before serving
