Preheat the oven to 400°F (200°C)
In a shallow bowl, mix breadcrumbs and grated Parmesan cheese for the coating mixture
Add the tomato sauce, ¼ cup (180 ml) of water, honey, apple cider vinegar, balsamic vinegar, coconut aminos, liquid smoke, paprika, garlic powder, onion powder, chili powder and pepper to a sauce pan and bring to a boil
Lower the heat and simmer for 10 to 15 minutes
Gradually add 1 teaspoon of arrowroot powder at a time while whisking
Allow the sauce to simmer for a few minutes between each addition
If you want a thicker sauce, use 1 to 2 teaspoons total, but if you want thicker: 1 tablespoon (8 g) is a good consistency
Be sure to whisk well when adding the arrowroot to avoid clumping
Remove the sauce from the heat and let it cool completely while you make the chicken cutlets
Beat the chicken cutlets and coat with the breadcrumb and Parmesan mixture
Bake until golden and cooked through
