Melt butter in a stainless steel pan on low heat
Add paprika, cayenne, chilli flakes, crushed garlic, Dijon mustard, chives, parsley, lemon zest and juice, salt, and black pepper
Whisk all ingredients well to combine
Remove from heat and set aside at room temperature until ready to serve
Slice ribeye steak into large bite-sized pieces
Season steak heavily with salt and pepper
Sear steak on all sides in a stainless steel pan
Remove meat from pan and coat with cowboy butter
Serve with roasted garlic mashed potatoes and caramelized onions
