Baked Curry Rice With Hanging Chicken Skewers
  1. Cut chicken into chunks and mix with oil & spices. Let marinate.

  2. In a 9x13" baking dish, add onion, carrot, rice, oil, spices & water. Mix well.

  3. Skewer chicken (about 6 skewers, 7 pieces each).

  4. Lay skewers across the pan so they rest on the edges, hanging above the rice.

  5. Cover with parchment + foil (to prevent foil contact with food).

  6. Bake at 400°F (200°C) for 30 minutes.

  7. Remove cover and broil 10 minutes until chicken is golden.

  8. Meanwhile, mix salad ingredients with lemon, olive oil, salt & pepper.

  9. Serve the rice and skewers with salad & pita or flatbread.
