Soak around 6 dried chillies overnight. Drain and discard water.
Cut each chillies in half with stems and seeds removed.
Coarse blend chillies in a blender or with an immersion hand blender. Set aside.
Roughly chop fresh garlic, set aside.
Heat up a pan or skillet with cooking oil over medium heat.
Add in dried chillies, garlic & peppercorn.
Stir fry them until fragrant for about 2 minutes under low heat.
Add roasted peanuts and continue to stir until well combined for one minutes under low heat.
Add salt to taste and continue to stir for another 5 minutes before turning off the heat.
Let them cool completely before storing in an airtight container.
