Oatmeal Blueberry Muffins with Brown Sugar Oatmeal Streusel
  1. Pre-heat oven to 400°F and line muffin tray with liners

  2. In a medium mixing bowl combine oats, flour, sugar, baking powder, baking soda, salt and cinnamon

  3. In a large mixing bowl combine milk, butter, eggs, maple syrup, and vanilla. Stir until combined

  4. Add dry ingredients to wet ingredients 1 cup at a time folding gently until all dry ingredients are incorporated

  5. Gently fold in blueberries and fold just until incorporated

  6. In a separate bowl mix streusel topping. Add brown sugar, flour, oats, cold butter, vanilla and salt

  7. Spoon muffin mixture into lined muffin tray and fill ¾ full, then top mixture with streusel topping

  8. Place in pre-heated oven for 20-25 minutes or until golden brown and a toothpick inserted comes out clean

  9. Cool for about 20 minutes and remove from muffin tin. Serve and enjoy
