Nana's Goat Curry
  1. Heat ghee in a pan and add cloves, cinnamon. peppercorns.

  2. Add onion, ginger and garlic

  3. Saute until golden, then add tomato until reduced.

  4. Add goat meat and yogurt

  5. Add paprika and turmeric and ½ of the garam masala and cook for 45 minutes on low

  6. Add chilies (adjust to taste)

  7. Then add water

  8. Then add coriander, salt and the other ½ of the garam masala

  9. Reduce heat to low, cover and simmer for 45 mins.

  10. Add bay leaves 15 mins before serving.
