Blend the pistachios, frozen spinach, and plant milk until smooth.
Stir in the sugar, flour, baking powder, lemon juice and zest, melted vegan butter or oil, and a pinch of salt.
Carefully combine everything and transfer the batter to a loaf pan.
Bake at 180C/360F for 60-70min.
Let it cool down and decorate with a sugar frosting.
