Lemon Pistachio Cake
  1. Blend the pistachios, frozen spinach, and plant milk until smooth.

  2. Stir in the sugar, flour, baking powder, lemon juice and zest, melted vegan butter or oil, and a pinch of salt.

  3. Carefully combine everything and transfer the batter to a loaf pan.

  4. Bake at 180C/360F for 60-70min.

  5. Let it cool down and decorate with a sugar frosting.
