Prick and rub the potatoes with olive oil then bake for 45 minutes at 200°C
Pan fry diced onion with broccoli and chopped garlic until soft. Season with salt and pepper
Pan fry the chicken until cooked through or use leftover roast chicken
Air fry pancetta for 6-8 minutes at 200°C until crispy
Finely chop chives, the pancetta and the ball of mozzarella
Slice the tops of the potatoes off and scoop the insides into a bowl. Add butter, season with salt and pepper, then mix through creme fraiche and milk
Add the broccoli, onions, garlic, cubed cooked chicken, mozzarella, pancetta, chives, and some of the 4 cheese mix. Give it a good mix then stuff back into the skins
Top with cheese and place back in the oven for 15 minutes at 200°C
Add a sprinkle of chives and serve with a side salad
