Spicy Potato Noodles *gluten Free
  1. Peel and cut the potatoes into thin slices, steam for 15 minutes until they are completely cooked.

  2. Use a potato masher to mash the potatoes, add potato and tapioca starch, knead into a dough.

  3. If the dough is still sticky, add a bit more potato starch. Let the dough rest for 10 minutes.

  4. Take a small portion of the dough and roll it so it turns into a thick noodle.

  5. Boil water, when it’s boiled, add the noodles and let them cook for about 3 minutes.

  6. Take them out and put them in two separate bowls.

  7. In each bowl, add 2 tbsp soy sauce, 1 tbsp dark vinegar, 2 tbsp chili oil, half the chopped garlic and scallion, mix everything and enjoy.
