  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

  2. In a large bowl beat together butter, cream cheese, lemon juice, salt, and monk fruit sweetener, until it has reached a fluffy consistency.

  3. Separate the egg and add the egg white and vanilla extract.

  4. Slowly add in almond flour while continuing to mixing until combined thoroughly.

  5. Form dough into about 1 ½-inch balls and set them on the baking sheet. Flatten slightly.

  6. Bake for about 15 minutes until the edges are lightly golden.

  7. Allow to cool completely before serving.
