Preheat oven to 350°F. Line a baking sheet with parchment paper.
In a large bowl beat together butter, cream cheese, lemon juice, salt, and monk fruit sweetener, until it has reached a fluffy consistency.
Separate the egg and add the egg white and vanilla extract.
Slowly add in almond flour while continuing to mixing until combined thoroughly.
Form dough into about 1 ½-inch balls and set them on the baking sheet. Flatten slightly.
Bake for about 15 minutes until the edges are lightly golden.
Allow to cool completely before serving.
