Chicken and Vegetables
Sear chicken in oil until browned. Remove chicken.
Sauté onion, garlic, celery, and carrot until fragrant. Add Italian seasoning.
Add chicken broth.
Return chicken to pot. Simmer 45 minutes until tender.
Shred chicken and return to soup.
Add orzo pasta. Cook 8–10 minutes.
Make Avgolemono Mixture
Whisk eggs with lemon juice and zest.
Temper eggs by slowly whisking in hot soup.
Stir avgolemono mixture back into the pot.
Season with salt and pepper.
