Lemon Butter Cookies
  1. Preheat your oven to 350°F (175°C).

  3. Add the lemon zest, fresh lemon juice, and vanilla extract to the bowl, mixing until well combined.

  4. In a separate bowl, whisk together the all-purpose flour and salt.

  5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.

  6. Scoop tablespoon-sized portions of dough and place them on a baking sheet lined with parchment paper, spacing them a few inches apart.

  7. Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden.

  8. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
