Mini Chickpea Pizzas
  1. Preheat the oven to 180°C (350°F).

  2. Drain and dry the chickpeas thoroughly with a paper towel to remove excess moisture.

  3. In a food processor, blend the eggs, dried chickpeas, and a pinch of salt until smooth.

  4. Spoon the mixture onto a baking paper-lined sheet, shaping it into 6 thin mini pizza bases.

  5. Bake in the preheated oven for 15 or 20 minutes, or until golden.

  6. Top each base with your favorite toppings.

  7. Place under the grill (broil) for 3 minutes or until the cheese is melted and bubbly.

  8. Serve hot and enjoy!
