Pre-heat oven to 400F. Lightly grease a 9-by-5-inch loaf pan and set aside.
In a medium size bowl, whisk together flour, baking soda, and salt. Set aside.
In a large bowl whisk together ghee (or oil), cinnamon, and nutmeg. Add sugar, whisk until sugar is dispersed.
Add egg + egg yolk and mashed bananas, whisk until combined.
Gently fold or stir dry ingredients into banana mixture,⅓ at a time, stir until just combined.
Grease or line a muffin pan and pour ⅔ of the way up.
Bake at 375F for 18-20 minutes or until tops are crisp and golden brown and a toothpick inserted into center comes out clean.
Let cool in pan for 10 minutes, then remove from pan and transfer to cooling rack to completely cool before cutting. Enjoy!
