For the Sticky Rice:
Cook the sushi rice according to package instructions.
In a small saucepan, combine the rice vinegar, sugar, and salt. Heat until the sugar and salt have dissolved.
Pour the vinegar mixture over the cooked rice and mix well. Allow to cool slightly.
For the Spicy Tuna:
Dice the tuna into small pieces.
In a bowl, mix the tuna with the mayonnaise, Sriracha, soy sauce, sesame oil, and lemon zest.
To Serve:
Form the sticky rice into small patties or balls.
Heat oil in a skillet and fry the rice patties until crispy on both sides.
Top the crispy rice with the spicy tuna mixture, sliced hot pepper, spicy mayo, soy glaze, and smashed or sliced avocado.
