Preheat oven to 170°F (or lowest setting).
Blend strawberries, lime juice, and sweetener (if using) until smooth.
Taste and adjust sweetness or tartness as desired.
Spread mixture evenly onto a parchment-lined baking sheet, about ⅛ inch thick.
Dry in oven for 4-6 hours, until no longer sticky.
Let cool completely, then peel off parchment.
Cut into strips and roll up in parchment or wax paper.
