Gigantes (Greek Baked Butterbeans)
  1. Soak butterbeans overnight

  2. Rinse the beans and place in large pot, fill with water and bring to a boil for 10 minutes

  3. Drain and return to the large pot

  4. Add Bay leaf, chopped carrots, celery, onions, tomato sauce, water, salt and pepper and bring to a boil

  5. Lower to medium heat, simmer covered for 1 hour

  6. In the meantime, chop your herbs. Pour olive oil into a shallow oven proof baking dish. Sprinkle the chopped herbs on top.

  7. Once the hour is up, place bean mixture into the baking dish, mix well incorporating all the herbs and oil.

  8. Taste for salt and pepper and adjust as needed

  9. Place into a 350 F oven for 1 hour

  10. Remove and let stand for a bit before serving; it will continue to thicken

  11. Serve with feta cheese, Kalamata olives and crusty bread on the side
