Grate an apple and gently squeeze out a bit of the juice.
In a bowl, combine the grated apple with an egg, flour, baking powder, sugar, lemon zest, and a pinch of cinnamon. Stir until well mixed.
Heat oil in a deep pan or skillet over medium heat, aiming for a temperature of 350°F (175°C).
Drop teaspoons of the batter into the hot oil, being careful not to overcrowd the pan. Fry in small batches of about 4 fritters at the time.
Fry each fritter for 2-3 minutes per side, or until they are puffed up and golden brown all around.
Use a slotted spoon to transfer the fritters to a plate lined with paper towels to drain excess oil.
While still warm, coat the fritters in a mixture of sugar and cinnamon. Enjoy immediately for best results!
