Lunar Cake
  1. Cream butter and sugar until smooth and creamy; beat in egg and vanilla. Sift together 2 cups flour, soda and salt. Add to creamed mixture alternately with buttermilk, making 3 dry and 2 liquid additions. Toss rhubarb with 1 tbsp flour and mix gently into batter. Spoon into buttered 13 x 9 inch cake pan and smooth the surface (don't use a metal pan - the rhubarb will eat the finish!)

  2. Topping: Blend together all ingredients and sprinkle evenly over batter.

  3. Bake at 350 F for 45 minutes or until the cake has risen and browned and comes away from the edges and a skewer inserted in centre comes out clean. Makes about 18 servings (or 12 nice large pieces)
