Apple Cider Braised Pork Butt
  1. Preheat oven to 325°F.

  2. Season the pork with salt, pepper and garlic powder.

  3. Heat olive oil in a Dutch oven over medium-high heat and sear the pork for 3–4 minutes per side until golden brown. Remove and set aside.

  4. Add the onion and garlic to the same pot.

  5. Pour in the apple cider, chicken broth, Dijon, Worcestershire and brown sugar. Stir and scrape up all those browned bits from the bottom.

  6. Add the pork back to the pot along with the fresh thyme. Cover and bake for 2½ hours.

  7. Add the apple wedges, leave the lid off, and bake for another 45–60 minutes, or until the pork is fall-apart tender.

  8. Remove the pork, apples and onions. Simmer the sauce on the stovetop for about 5 minutes, then stir in the butter.

  9. Add everything back and spoon that cider sauce all over the pork.

  10. Serve over creamy mashed potatoes and enjoy!
