Beat all ingredients except butter until fully combined & bubbles are forming. Do not leave any chunks of greek yogurt, be sure to mix completely. Add any additions you would like to add, as well as spices.
Turn pan to medium-low. Add butter & let melt. Coat pan with the butter. Once coated, add eggs & allow the mixture to completely cover the bottom of the pan.
Allow to cook for a minute before stirring. Do not stir frequently, 3-4 times total during cooking. Just flip eggs onto uncooked portions as it cooks.
Because of the milk & greek yogurt, the eggs will be more creamy than eggs without - do not overcook. There will be a bit of creaminess left. This is expected.
Serve immediately.
