Preheat your oven to 220°C (200°C fan). Line a baking tray.
Sift the flour, salt and bread soda into a large bowl.
Stir through the honey and make a well in the centre.
Pour in the buttermilk and mix quickly with a fork or your hand until you have a soft but not sticky dough — you might not need every drop.
Turn onto a floured surface, shape into a round and place on your tray.
Cut a deep cross into the top with a sharp knife (to let the fairies out, as they say).
Bake for 15 mins, then reduce heat to 200°C (180°C fan) and bake for another 20 mins. It's ready when it sounds hollow when tapped underneath.
Cool on a wire rack. Lightly wrap in a clean tea towel for a softer crust and eat warm with butter.
