Crispy Fried Pickles
  1. Mix all the ingredients for the dip together and put to one side.

  2. Heat some sunflower oil to 180°C in a large pan.

  3. If using the whole gherkins – slice into rounds.

  4. In a large bowl mix together the flours, baking powder and paprika and season with some salt and pepper.

  5. Add the tonic water and mix in with a fork.

  6. Pat the gherkin rounds with a paper towel.

  7. Dip them in the batter until well coated and fry in batches until golden brown.

  8. Keep the cooked ones warm while you fry the rest.

  9. Serve alongside the garlic yogurt dip.
