Cherry Fruit Leather
  1. Preheat oven to 170 degrees F.

  2. Remove stems and pit cherries.

  3. Place pitted cherries and water in a pot and bring to a boil. Simmer for 10 minutes, add sugar and lemon juice, then simmer for 10 more minutes or until cherries are broken down.

  4. Blend cherry mixture until smooth. If you use an immersion blender, you can do this in the pot. If you use a regular blender, make sure to remove the plastic cap off the top so that steam can escape. You can use a kitchen towel to cover the hole.

  5. Spread the cherry mixture evenly on 3 cookie sheets covered in parchment paper. Cook in the oven for 3-4 hours, checking every 20 minutes or so after 2 hours, until the mixture is a fruit leather texture.

  6. Once the fruit leather is cooled, you can cut it into strips and roll in parchment paper to make fruit roll-ups.
