  1. Place quinoa and water into a medium sized pot and place over high heat.

  2. Once boil has been reached, reduce heat to low and place a cover on the pot.

  3. Allow quinoa to simmer for 15 minutes and then turn off the heat.

  4. Leave the cover on for 5-10 minutes and then remove and fluff with a fork.

  5. Pour quinoa into large bowl.

  6. Now add in rinsed and drained chickpeas, pistachios, cucumbers, red pepper, onion, mint, parsley, feta, lemon juice, olive oil, and salt and pepper.

  7. Enjoy!
