Start by processing all the ingredients for the marinade together.
In a large bowl with the chicken thighs add in the marinade and mix until well coated.
Marinate for at least one hour or overnight (or pop in a freezer bag for meal prep!).
For pan frying: in a large sauté pan, heat up 2 tablespoons of a neutral oil over medium high heat.
Add in the chicken in batches making sure not to overcrowd.
Cook for 6-8 minutes until golden brown and then flip and cook for an additional 5-7 minutes until fully cooked and golden brown.
Chicken can also be skewered and air fried at 375 F for 15 minutes, turning halfway or grilled over medium high heat, 4-6 minutes per side
Chicken can also be baked on a greased sheet pan at 425 F for 15-20 minutes
For the Spicy Avocado Sauce: blend all the ingredients until creamy and smooth
Serve the chicken in tortillas, with rice, salad or potatoes and toppings of your choice! Don't forget the sauce!
