Cacio e Pepe
  1. Set a large pot of water on the stove to boil. Salt aggressively. While pot comes to a boil, prep (grate, grind) ingredients.

  2. Add pasta to boiling water. Boil for 1 minute less than package instructions. With 1½ minutes left to boil, remove ¾ c pasta water. Strain pasta when finished boiling.

  3. Place a pan over medium heat and add butter to pan. When melted butter starts to foam, sprinkle in 2 tsp black pepper and allow to bloom for 30 seconds.

  4. When pepper is fragrant, slowly whisk in reserved pasta water. Continue to whisk until mixture is a single, consistent color. Allow to simmer for 1 minute.

  5. Add drained pasta to sauce. Toss. Turn heat as long as possible. Sprinkle pecorino and ½ c parmesan over pasta. Allow to sit 1-2 minutes.

  6. Mix as hard as you can. When sauce starts to form, turn off stove and continue to mix over warm burner.

  7. Serve immediately, topped with additional grated parmesan and freshly ground black pepper.
