Bacon and Sweet Potato Hash
  1. Preheat the oven to 400°F.

  2. On a large baking sheet, toss the sweet potatoes with 2 tablespoons of the olive oil and sprinkle with salt. Roast in the preheated oven until tender, about 15 minutes.

  3. While the potatoes are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the bacon and reduce the heat to medium. Cook until the bacon begins to crisp, for 6 to 8 minutes. Add the bell pepper, scallions, and paprika. Cook for about 4 minutes, until the vegetables begin to soften.

  4. Once the sweet potatoes are finished roasting, add them to the skillet and cook until they begin to brown, for about 8 minutes. Serve hot, garnished with parsley.
