Blueberry Cottage Cheese Breakfast Bake
  1. Preheat your oven to 375°F (190°C). Grease an 8×8-inch or 9×9-inch baking dish with butter or cooking spray.

  2. In a large mixing bowl, combine the cottage cheese, eggs, maple syrup (or honey), vanilla extract, cinnamon, and salt. Whisk until smooth. Stir in the rolled oats and baking powder until well combined. Gently fold in the blueberries.

  3. Pour the batter into the prepared baking dish, spreading it evenly. Sprinkle the sliced almonds or chopped walnuts on top, if using. Bake for 35-40 minutes, or until the top is golden brown and the center is set.

  4. Let the bake cool for 10 minutes before slicing. Drizzle with additional maple syrup or honey and garnish with extra blueberries. Serve warm and enjoy!
