Set oven to 180°C (350°F). Line a baking tray with parchment paper.
Grate zucchini and squeeze out excess water using a cloth or paper towel.
In a bowl, combine zucchini, almond flour, parmesan, egg, olive oil, and spices. Mix into a dough.
Place dough on parchment paper, cover with another sheet, and roll very thin.
Cut into squares or cracker shapes using a knife or pizza cutter.
Bake for 25–35 minutes until golden and crispy.
Let cool completely (they crisp up more after cooling).
