Roasted Asparagus With Pistachios + Parmesan -
  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper or tin foil.

  2. Remove hard stems from asparagus stocks and arrange in an even layer on the baking sheet. Drizzle evenly with lemon juice and olive oil and season generously with salt and pepper.

  3. Finely chop pistachios and sprinkle over asparagus.

  4. Bake for 12-15 minutes until asparagus is bright green and tender.

  5. Remove from oven and top with freshly grated parmesan. Eat immediately!
