Crispy Parmesan Roasted Potatoes
  1. To a small bowl, add the melted butter, parsley, garlic, parmesan, salt, black pepper, and oregano. Mix together and set aside.

  2. Preheat the oven to 400°F.

  3. Rinse the potatoes well to clean and slice each one in half. Transfer to a bowl.

  4. Add the garlic and herb butter to the bowl and toss the potatoes in until combined well.

  5. Add the ½ cup of grated parmesan to a bowl. Dip each potato so that the flat side with no skin is covered in parmesan. Press down so the parmesan sticks on and transfer to a non-stick tray. Repeat with the rest of the potatoes.

  6. Pop in the oven to bake for 30 to 40 minutes until the bottoms are golden brown and crispy and the center is cooked through - soft and fluffy.

  7. Take out of the oven and enjoy with your favorite dipping sauce!
