In olive oil, sauté mushrooms until slightly golden
Push aside the mushrooms, add 2 tablespoons of butter, sauté onions, garlic and jalapeños for about a minute
Add cherry tomatoes
Mix together, add in tomato paste and seasonings and mix
Add in orzo and broth, lower heat to low to medium heat, cover and cook about 12 minutes until orzo has reached desired consistency, stirring during cooking
Two minutes before pasta is almost cooked, add in heavy whipping cream, spinach, and mozzarella cheese, and mix gently
Serve as a main dish with grilled chicken or shrimp, or as a perfect side dish
