Roast the salmon 200°C for 8 minutes. Allow to cool and Flake the salmon using a fork.
Finely slice the onion, chilli, dill and chives and roughly chop the capers. Mix this into the salmon with the yoghurt, mustard, lemon juice and zest and a pinch of salt and pepper.
Load onto your bread of choice, I use the bagel thins from @warburtonsuk with a layer of rocket at the base.
Top with extra chives, chilli and lemon zest and an extra sprinkle of black pepper.
